Braised Winter Cabbage

Ingredients:

  • 1 head of winter cabbage (green or red), cored and thinly sliced

  • 2 tablespoons butter or olive oil

  • 1 onion, thinly sliced

  • 2 cloves garlic, minced

  • 1/2 teaspoon caraway seeds (optional)

  • 1/2 cup vegetable or chicken broth

  • Salt and pepper to taste

  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. In a large skillet or pot, melt the butter or heat the olive oil over medium heat.

  2. Add the thinly sliced onion to the skillet and sauté until they become soft and translucent.

  3. Stir in the minced garlic and caraway seeds (if using) and cook for another minute until fragrant.

  4. Add the thinly sliced winter cabbage to the skillet. Toss the cabbage to coat it with the onion and garlic mixture.

  5. Pour in the vegetable or chicken broth. Cover the skillet and let the cabbage cook for about 10-15 minutes, stirring occasionally, until the cabbage is tender but still has a slight bite to it.

  6. If the liquid evaporates too quickly and the cabbage starts to stick, add a splash more of broth or water.

  7. Season the braised cabbage with salt and pepper to taste.

  8. Once the cabbage is cooked to your desired tenderness, remove the skillet from heat.

  9. Garnish with chopped fresh parsley before serving, if desired.

This braised winter cabbage dish is a comforting and savory side that pairs well with roasted meats, poultry, or served alongside mashed potatoes.
