Collard Greens and Chick Pea Curry
Ingredients:
1 bunch of collard greens, washed and chopped
1 can (15 oz) chickpeas, drained and rinsed
1 onion, finely chopped
3 cloves garlic, minced
1-inch piece of fresh ginger, grated
2 tomatoes, diced
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon red chili powder (adjust to taste)
1 teaspoon garam masala
1 tablespoon vegetable oil
Salt to taste
Chopped cilantro for garnish (optional)
Cooked rice or naan bread for serving
Instructions:
Heat the vegetable oil in a large skillet or pot over medium heat. Add the chopped onions and sauté until they turn translucent.
Add the minced garlic and grated ginger. Sauté for another minute until fragrant.
Stir in the diced tomatoes and cook until they start to soften.
Add the ground turmeric, ground cumin, ground coriander, red chili powder, and salt. Mix well and cook the spices for a couple of minutes until aromatic.
Add the chopped collard greens to the pot. Stir and cook until the greens start to wilt down.
Pour in a splash of water, cover the pot, and let the collard greens cook for about 5-7 minutes until they are tender.
Once the collard greens are cooked, add the drained chickpeas and garam masala. Stir everything together and let it simmer for another 5 minutes to allow the flavors to meld.
Check for seasoning and adjust salt or spices if needed.
Serve the delicious collard greens and chickpea curry hot, garnished with chopped cilantro, alongside cooked rice or with naan bread.
